Mr. Ryu Soo-young Recipe
▣ Ingredients (serves 4)
Main Ingredients
1/4 head of kimchi (about 600g), 300g pork shoulder (for stew), 1/2 cup (100ml) kimchi juice, 1/2 block of tofu
※For store-bought kimchi, ferment it in a sealed container in the refrigerator for 2-3 weeks.
※ The amount of pork should be half of the kimchi amount.
Vegetables
1 onion, 1 green onion, 1 tablespoon minced garlic
Seasonings
1 tablespoon salted shrimp, 2 tablespoons soy sauce, 2 tablespoons red pepper powder, 1 teaspoon coarse salt, 1 tablespoon vinegar
Water/Oil
1 round of cooking oil, 1 liter water
▣ Preparation
- Slice the onion
- Slice the green onion (into large chunks)
- Cut the tofu (1/2 block) into appropriate sizes
▣ Cooking Instructions
1. Preheat a stainless steel pot with a lid over high heat for about 3 minutes, then add 1 round of cooking oil.
(It's ready when the oil ripples upon adding.)
2. Add the pork shoulder to the preheated pot and stir-fry over medium heat until browned.
3. When the oil starts sizzling, add 1 tablespoon of minced garlic.
4. Once the garlic smell mellows, add 1 tablespoon of salted shrimp.
5. Push the ingredients to one side, pour 2 tablespoons of soy sauce into the empty space, let it bubble, then mix with the pork.
6. Turn off the heat or reduce to low, add 2 tablespoons of red pepper powder, and stir-fry to make chili oil.
7. Add 1 liter of water, turn to high heat, and add the sliced onion, green onion, 1/2 cup of kimchi juice, and kimchi. Bring to a boil.
8. Once boiling, reduce to medium heat, add 1 teaspoon of coarse salt, cover, and simmer for 40 minutes.
(After about 30 minutes, taste and adjust: if too salty, add a small cup of water; if too bland, simmer for 10 more minutes.)
9. Add 1 tablespoon of vinegar and the tofu, and simmer for an additional 1-2 minutes.
▣ Unique Features of Mr. Ryu Kimchi Stew
1. Only stir-fry the pork, and add the kimchi later with water.
2. Add salted shrimp when stir-frying the pork.
3. Add vinegar at the final stage.

▣ Ingredients (server 2)
Main Ingredients
- 1 cup pork (shoulder) (130g)
- 3 cups sour kimchi (390g)
※ Must use sour kimchi!
※ Any pork cut is fine! Belly pork is also okay!
Vegetables
- 2 Cheongyang peppers (20g)
- About 2/3 stalks green onion (70g)
Seasonings
- 1 tablespoon minced garlic (20g)
- 1 tablespoon coarse red pepper powder (8g)
- 1/2 tablespoon fine red pepper powder (3g)
- 1 tablespoon soup soy sauce (10g)
- 1 tablespoon salted shrimp (20g)
※One type of red pepper powder is also fine!
※Preferably soup soy sauce, but regular soy sauce is fine if not available!
※If there is no salted shrimp, use fish sauce. Fermented seafood is essential!
Water/Oil
- 3 cups water (540ml, roughly the amount for 1 pack of ramen)
▣ Preparation
- Cut pork into bite-sized pieces (about 1.5cm)
- Slice Cheongyang peppers (0.5cm diagonally)
- Slice green onion (0.5cm thick)
▣ Cooking Instructions
1. In a pot, add pork, purified water, and salted shrimp. Bring to a boil over high heat.
2. When it starts boiling, reduce to medium-low heat and simmer for at least 10 minutes until the meat is tender.
※ If you have more time, simmer longer for better taste!
3. After 10 minutes, if the water has reduced, add the same amount of water back. Then add sour kimchi, soup soy sauce, coarse red pepper powder, fine red pepper powder, and minced garlic.
※ If you like, you can add tofu and onions at this stage.
4. When the stew starts to boil vigorously, add green onion and Cheongyang peppers.
※ If you have more time, simmer longer and add green onion and Cheongyang peppers at the end for a freshly cooked taste!
5. Just before finishing, sprinkle red pepper powder and it's done.
▣ Unique Features of Mr. Baek Jong-won's Kimchi Stew
1. Instead of stir-frying, add pork and salted shrimp at the beginning and boil them together.
